1. Seasoning with Salt
Put down that salt shaker! Use a small bowl of salt and add pinches as you cook and taste. This may sound silly, but it’s easier to control the amount and it ensures even coverage. Salt is a natural way to enhance the flavour of a dish. See the diagram for the perfect pinch!
2. Identifying Flavours
When tasting your food, consider the five basic tastes: salty, sweet, sour, bitter, and umami. Use this handy guide to help balance your flavours when cooking up a storm.
Too Spicy: Citrus or dairy act as natural cooling agents to balance out the spice
Too Sweet: Add a sour or savoury ingredient like vinegar, herbs or dairy
Too Sour: Add some sweet! Take your pick, but we suggest sugar, honey or fruit preserves.
Too Bitter: Add something salty or sweet! Either will help balance out the flavour.
3. Searing Proteins
Leave that meat alone! When roasting or browning anything, the tendency is to turn, check and move. Follow that recipe card and leave the protein alone so that it can brown evenly. If it says to cook it for 3-5 minutes per side, let that cook for the allotted time. Ensure you cook in smaller batches as well if necessary.
