January 8, 2019The #FreshFam knows that when you receive your (not so) little box of joy from us, the ingredients come pre-portioned, so you have just the right amount for dinner and cut back on leftovers and food waste.
It’s AMAZING as a step towards sustainability, but we know not every meal you’ll eat will be carefully pre-portioned. So, if you want to get the most out of every ingredient, you’ll need to be creative!
Luckily, we’re here to help with that. Here are three delicious and handy ways to make the most of some common ingredient leftovers.

How To Use Leftover Herbs
We’ve all had leftover herbs die on us. It’s all too easy to get a large pre-packaged bunch from the store, use far less than you picked up, and watch the remains slowly wilt and die. But we’ve got just the solution to change their fate! There are lots of options to let your herbs fulfill their destiny.
Frozen Herb Cubes:
By freezing herbs in oil, you can have an immediate flavour booster on hand as a base for stews, soups, and roasts. Why oil and not water? Turns out preserving herbs this way reduces the chances of freezer burn.
Keep in mind, that this works best with tougher herbs like rosemary, sage, oregano, and thyme.
Homemade Pesto

- Pine nuts
- Garlic Cloves
- Herbs (basil, parsley, rosemary etc.)
Instructions:
- Place leftover herbs with the garlic clove and pine nuts into blender and blend until mixture is liquid
- Pour mixture into ice cube tray and freeze
- Once frozen, place cubes into pan and stir while melting
- Add pasta to pan, cover well and stir until cooked
- Top pasta with pine nuts, Parmesan and a sprinkle of herbs
