Instead of reaching for a store-bought popsicle that’s made with how-do-you-pronounce-that ingredients, try these homemade recipes everyone will love. They’re the easiest make-ahead dessert for summer BBQs and relaxing under the sun. With just a few staple ingredients – that are probably hiding in your fridge or pantry right now – you can have a delicious, fresh summer treat. Whether it’s citrus, stone fruits, berries, herbs, or yogurt, get ready for a delicious treat. Ready, set, grab a popsicle mold, and GO!
1. Lemon Ginger Chamomile Popsicles
This may not sound like summertime flavours, but we promise they won’t disappoint. We took these throat-soothing ingredients from your favourite cold-weather beverage and gave it a summertime makeover!
Ingredients:
- 3 1/2 Cups Water
- 1 Tablespoon Ground Ginger
- 2 Tablespoons of Honey
- 3 Chamomile Tea Bags
- 1/3 Cup Lemon Juice + Handful Lemon Slices
Instructions:
- Combine water and ginger in a small saucepan over medium heat, and bring to a simmer.
- Add honey and continue cooking until dissolved, 2-3 minutes. Remove from heat.
- Add chamomile tea bags to the saucepan and let steep 10 minutes.
- Once mixture reaches room temperature, stir in lemon juice.
- Place thin lemon slices into popsicle molds before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.
2. Coconut Lime Popsicles
Feel like your on a tropical beach, while your actually in the comfort of your home. Whip up these delicious creamy popsicles, then close your eyes and picture yourself on a tropical island.
Ingredients:
- 3 Cups Coconut Milk
- Juice from 2.5 Limes
- 1/2 Cup Honey
- Handful Ice
Instructions:
- Combine all ingredients in a blender. Blend until well combined.
- Divide between popsicle molds and freeze about 4 hours before serving, preferably overnight.
3. Cucumber Watermelon Popsicles
This popsicle screams SUMMER. We found the most hydrating combo: watermelon and cucumber. Enjoy these on hot summer days or whenever you’re craving a fresh treat.
Ingredients:
- 1 Small Watermelon (about 1 pound), peeled and chopped into small cubes
- 2 Tablespoons Honey
- 3 Teaspoons Lime Juice
- 1/2 Cucumber, peeled and thinly sliced
Instructions:
- Combine watermelon, honey, and lime juice in a blender, and blend until smooth.
- Place cucumber slices into popsicle molds, before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.
4. Sangria Popsicles
Sorry kiddos, this is an adult-only popsicle. All the great flavours of a summer sangria in the palm of your hand and it’s easy to make? Count us in. Simply combine your favourite fruits, red wine and voilà, a summertime boozy popsicle treat.
Ingredients:
- 1/4 Cup Granulated Sugar
- 1/4 Cup Water
- 3 Tablespoons Lime Juice
- 1 1/4 Cups Red Wine
- 1 1/4 Cups Orange Juice
- Orange and Lime Slices
Instructions:
- Make a simple syrup by combining sugar and water in a small pot, and heat over medium-high. Bring to a boil, then reduce to a simmer until sugar dissolves. Remove from heat and stir in lime juice. Set aside.
- In a tall pitcher, combine wine, orange juice, and simple syrup – then divide between popsicle molds. Add in thinly sliced orange and/or lime slices, if desired.
- Freeze about 4 hours before serving, preferably overnight.
5. Citrus Herb Popsicles

Ingredients:
- 1 1/2 Cups Orange Juice
- 2 Tablespoons Lime Juice
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Honey
- 1 Cup Ice
- Handful Fresh Basil
Instructions:
- Combine all ingredients in a blender, but reserve a few herb leaves to add in whole. Blend until well combined.
- Place reserved herbs into popsicle molds before pouring over mixture.
- Freeze about 4 hours before serving, preferably overnight.
