These Cheesy Stuffed Mushrooms might just be better than pizza

We know, we know, big call. But honestly, we think we’re in love.

This recipe is so simple we can’t believe we hadn’t thought of it before. Tasty portobello mushrooms topped with mozzarella, tomato, basil and balsamic vinegar? It’s a match made in heaven.

The best part about these little parcels of Italian delights is that they’re ready in less than 10 minutes. Right?!

Cheesy Stuffed Mushrooms

Ingredients

4 large portobello mushrooms, stalks removed
50g butter
1 bunch basil, half chopped
1 clove garlic, crushed
1 handful cherry tomatoes, halved
200g bocconcini or mozzarella
balsamic vinegar
salt and pepper, to taste

Method

  1. Preheat the grill on your oven to 190°C. Line a baking tray with baking paper.
  2. On a medium-high heat, melt the butter. Then stir through the garlic and half of the bunch of basil leaves, chopped. Brush the surface of the mushrooms with basil butter.
  3. Tear up the bocconcini and layer with the tomatoes in the mushrooms.
  4. Grill for 8 minutes, or until the cheese is melted and golden. Drizzle with balsamic vinegar and season with salt and pepper to taste. Delicious!
